The toasting process builds flavor in the sesame oil. When you toast spices, their flavors get livelier. The same goes for seeds. It makes the nuttiness more intense. But this added flavor makes toasted sesame oil better for finishing than cooking. It has a lower smoke point than regular sesame oil, which we use for shallow frying or roasting.
Origin
Sesame is grown in tropical and subtropical regions throughout the world, but mainly in Africa, South America and Central America. Soya is one of the oldest cultivated plants. As long ago as the year 3000 BC, the plant was being cultivated by the Chinese. America is currently the largest producer of soya, accounting for almost two-thirds of global production.
Colour and flavour
The flavour of mixed sesame oil is slightly nutty. Sesame oil is dark in colour and it has an aromatic odour.
Use
The nutty flavour of this oil makes it perfect as a lettuce oil for salads. It is therefore perfect for delicious dressings or for marinades. The oil can also be used for sautéing, frying and flash frying. The oil can also be added to dishes. Just a couple of drops is sufficient. It gives dishes an extra aroma.
